Spiced Plum and Cheese Omelette Ciabatta Sandwich

The changing of the seasons, the short gap before the next season takes over, is a great gift. It's a time that tends to fill me with great excitement. Autumn's waiting in the wings, yet summer isn't ready to say goodbye. There's no need to rush, I can indulge in Vorfreude - the German word for the happiness and excitement that we feel before a special event. The idea of coziness and comfort food, long walks in the forest and snuggly sofa time is already more than appealing. I replace my flowery dresses with a pair of jeans and a cardigan and spend just as much time outside as I did in the past few months. The sun is lower and wraps the world around me in a gorgeous golden glow, everything looks softer and warmer. My appetite shifts from lighter treats to the richer pleasures of the kitchen, and my mood is full of joy and curiosity for everything that the next couple months will bring into my life.

Cooking plums with spices is a celebration of late summer, but with a subtle nod towards the festive season. I had this aromatic duo in mind when Leerdammer asked me to create a new sandwich, a sandwich that fits my current mood. The fruit caramelized in sugar, cinnamon, and coriander seeds, sits on top of a rich cheese omelette. This whole juicy joy is layered in a soft ciabatta bread, sprinkled with a bit of fresh thyme. Just one bite and I'm ready to celebrate the season. I love to indulge in the produce that every month of the year offers, especially when there's fresh bread on the table: Be it in my Cheese, Bacon, and Egg Sandwich with Garden Vegetables, a summery light creation in June, or the pleasures of zucchini cheese fritters and strawberries piled between two slices of bread. Maybe I should come up with a sandwich calendar one day.

I usually spend late September and October experimenting with roots and winter squash, with grapes, plums, and apples. I try out new meat dishes and enjoy my trusted classics. But this year, I'll 'lose' a month in the kitchen. I'll be traveling through Europe and the US pretty much all of October to launch my book and to finally present my recipes, printed on paper, physically and not just in the digital spheres of the world. As much as I know that I'll miss my kitchen, I can't say that this circumstance fills me with sadness. I'm nervous, excited, even a bit hysterical at times, but I can't wait to finally open the pages of the Eat In My kitchen book and show it to all the people who I'm going to meet soon.

To make up for the kitchen break ahead of me, I spent the past few weeks cooking and baking with all the ingredients that I'll miss out on. Plums are at the top of my list - for sweet and savoury dishes. If I had to choose one flavour to describe this time of the year, it would be plums. I love their sour fruitiness, especially cooked, in combination with aromatic spices. Add them to a bowl of vanilla ice cream and whipped cream and you can still taste summer, turn them into a fragrant chutney and stir them into the thick sauce of a venison stew in a couple months and you're ready for winter. Dumplings, jam, cakes, or sandwiches, there's no recipe that this fruit can't deal with.

Spiced Plum and Cheese Omelette Ciabatta Sandwich

Makes 2 Sandwiches

For the caramelized plums

  • granulated sugar 2 tablespoons

  • unsalted butter 2 tablespoons

  • coriander seeds, crushed in a mortar, 1 teaspoon

  • ground cinnamon 1/2 teaspoon

  • large plums, cut into quarters, 4

For the omelette

  • organic eggs 3

  • heavy cream 60ml / 1/4 cup

  • freshly grated nutmeg

  • fine sea salt

  • ground pepper

  • butter 1 teaspoon

For the sandwich

  • lettuce leaves 2-4

  • small ciabatta bread, cut into 2 buns, each cut in half, 1

  • Leerdammer cheese, thinly sliced, about 60g / 2 ounces

  • a few fresh thyme leaves

  • black peppercorns, crushed in a mortar

For the caramelized plums, in a medium, heavy pan, heat the sugar, butter, and spices over medium high heat, stir, and add the plums as soon as the butter is golden and sizzling. Cook the plums for about 2-3 minutes on each side or until golden and soft. Turn them gently one by one, and mind that they keep their shape. Take the pan off the heat.

For the omelette, whisk the eggs and heavy cream and season with nutmeg, salt, and ground pepper. In a small, heavy or non-stick pan, heat the butter over medium-high heat. Pour the egg mixture into the pan, scramble very lightly and fold onto itself. When the bottom side starts to become golden flip the omelette around. Cook it shortly from the other side for about a minute or until the omelette is just set. Take the pan off the heat and cut the omelette into large chunks.

Arrange the lettuce on top of the two bottoms of the buns. Divide the warm omelette between the buns, spread the cheese on top, then finish it off with the warm caramelized plums. Pour the buttery juices from the pan used for the plums over the fruit and sprinkle with thyme and a little crushed black pepper. Close the bun, squeeze a little - gently! - and enjoy!

Artichoke Omelette and Basil Pesto Ciabatta Sandwich

The inspiration for this sandwich comes from a lady who has been reading through almost all of my eat in my kitchen recipes in the past few weeks. She truly impressed me, not only because she soaked up hundreds of posts and stories, she also cooked many of the recipes in her kitchen and sent me the sweetest comments. We've never met, but here, on these pages, we share our passionate love for food.

A couple weeks ago, I found out that she loves to cook with artichokes as much as I do and she told me about an omelette she makes with the preserved vegetable. This genius idea never crossed my mind but when she mentioned it I knew instantly that I would turn this dish into a sandwich. I'm a big fan of juicy omelette sandwiches and I also love to sprinkle my bread with pesto, so this seemed like the perfect occasion to combine both treats. In the end, I also stuffed lots of fresh basil and rocket leaves inside the spongy ciabatta which added a fragrant Mediterranean flavour to the hearty eggs. It was fantastic, thank you, lady!

Artichoke Omelette Ciabatta Sandwich with Basil Pesto

For 3-4 sandwiches you need

For the pesto

  • fresh basil leaves 20g / 3/4oz

  • fresh mint leaves 2

  • pine nuts 1 tablespoon

  • Parmesan, freshly grated, 2 tablespoons

  • garlic, crushed, 1 small clove

  • olive oil 50ml / 1/4 cup

  • salt

Mix the ingredients for the pesto in a blender and season to taste. 

For the omelette

  • organic eggs 3

  • heavy cream 50ml / 1/4 cup

  • freshly grated nutmeg

  • salt and pepper

  • large preserved artichoke hearts, quartered, 2

  • butter 1 heaping teaspoon

For the omelette, whisk the eggs, cream, nutmeg, salt and pepper. Heat half the butter in a small pan and sear the artichokes on high heat for about 2 minutes or until golden brown. Add the remaining butter and pour the egg mixture over the artichokes. Scramble very lightly and fold onto itself. When the bottom side starts to become golden flip it around. Brown it lightly from the other side for about a minute. Take the pan off the heat and cut the omelette into large chunks. 

For the sandwich

  • medium ciabatta bread, cut into 3-4 buns

  • rocket (arugula) leaves, a small handful

  • fresh basil leaves 12

  • black peppercorns, crushed in a mortar

Lay a few rocket leaves on the bottom side of each sandwich, arrange the omelette on top and sprinkle with pesto, fresh basil leaves and crushed pepper. Close the sandwich and enjoy!

Strawberry and Lime Chèvre Ciabatta Sandwich with Basil

At the moment I can enjoy the best strawberries - sweet like honey and so good that you could just nibble them as they are, pure and without any distracting addition. I have done that excessively but now it's time to get a bit playful with this lovely fruit.

As summer is nearing, I like to simplify my recipes, less ingredients, less work yet still delicious and the ultimate bliss while I'm sitting at the open kitchen window with a glass of rosé wine in front of me and a friend to chat with. Now is the time for easy nibbles, good bread and cheese, fresh herbs, raw fruits and vegetables, and aromatic olive oil - pure, natural flavours.

When my mother was here a couple weeks ago, I did a lot of recipe testing together with her. All those different flavours, and indulging in so many dishes for days, finally called for a little break for my tastebuds. I felt like something simple, like a juicy ciabatta sandwich, so I whipped up some chèvre with a little lime zest, generously spread it on top of the oily bread and covered my perfect summer sandwich with strawberries and fresh basil. First I wasn't sure if the combination of chèvre and citrus would work, but there was no need to worry, they are a perfect match!

Strawberry and Lime Chèvre Ciabatta Sandwich with Basil

For 6 open sandwiches you need

  • fresh ciabatta bread 6 small slices

  • fresh chèvre (or any other soft goat cheese) 200g / 7oz

  • heavy cream 4 tablespoons

  • lime zest 1/4 teaspoon, plus a little more for the topping

  • strawberries, quartered, 150g / 5 1/4oz, plus 6 fruits cut in half for the topping

  • fresh basil leaves a small handful, for the topping

Whisk the chèvre, heavy cream and lime and adjust to taste. Add more cream if necessary, the texture should be smooth and thick. Divide the cheese between the bread, top with strawberries (quartered plus 1 fruit cut in half for each slice) and sprinkle with lime zest and basil. Enjoy!

Spinach Pesto and Mozzarella di Bufala Sandwich with Black Olives

The combination of mozzarella di bufala and pesto has been with me for as long as I can remember cooking. No matter if it's been praised or put down in the media, I always loved its honest simplicity. The little mounds of fine buffalo milk go so well with the fresh sharpness of green herbs, all these concentrated leaves packed with flavours, like basil, rucola or parsley. Mixed with nuts and seeds, parmesan and garlic, this dish offers one of the purest Italian pleasures in the kitchen.

Sometimes, one needs a little change without moving too far away from the original formula, a new variation which can lead to surprising results, nonetheless very satisfying. My pesto was next on this list! I replaced the traditional herbs with another tasty leave, baby spinach. Their fine aroma of iron, its distinct bitterness which isn't fully developed in the young leaves seemed like the right choice. The obligatory olive oil and parmesan made it nice and smooth but the fresh garlic had to stay out as I was worried that it would be too overpowering. I added some rucola (arugula) instead which gave the spinach a boost, nutty sunflower seeds instead of the sweet pine seeds, a hint of nutmeg, salt and pepper and it was done. It also tastes fantastic with pasta!

My pesto made quite a dramatic appearance on my Italian ciabatta sandwich. I topped it with aromatic black olives which turned them into a stunning Mediterranean beauty. What can I say about the first bite, it was juicy, fresh and green, the soft milkiness in contrast to the oily depth of the black fruits. It was great!

Spinach Pesto and Mozzarella di Bufala Sandwich with Black Olives

You can also use the pesto recipe for pasta.

For 2 sandwiches you need

  • ciabatta bread (with or without black olives), cut into thick slices

  • mozzarella di bufala, torn into bite sized pieces, 125g / 4 1/2 ounce

  • sblack olives 4-6

  • black peppercorns, crushed in a mortar, for the topping

For the pesto

  • fresh baby spinach 125g / 4 1/2 ounces

  • rucola 25g / 1 ounce plus a small handful

  • sunflower seeds 2 tablespoons

  • olive oil 100ml / 3 1/4 ounces

  • Parmesan, grated, 25g / 1 ounce

  • freshly squeezed lemon juice 1 tablespoon

  • salt 1/4 teaspoon

  • a pinch of sugar

  • a pinch of nutmeg

  • pepper

Purée the ingredients for the pesto in a blender until smooth, season to taste.

Arrange a few rucola leaves on 2 slices of bread and lay the mozzarella on top. Sprinkle with the pesto, olives and the crushed black pepper. Close the sandwich and enjoy!

Blue Cheese Omelette and Rosemary Prosciutto Ciabatta Sandwich

An especially luscious sandwich for an especially fun occasion: Anna from Pinterest asked me to join their March Breakfast Campaign with an eat in my kitchen sandwich board on my profile. After 65 creations on the blog dedicated to all the delicious culinary wonders that can possibly happen between two slices of bread, it's time to give the sandwich the attention it deserves.

I started my Pinterest profile around the same time as the blog, in winter 2013, to spark my own inspiration but also to share all my finds from the wide spheres of the web. The celebration of this amazingly easy (most of the time) and highly loved snack called for a voluptuous recipe that combines a few ingredients which almost guarantee a scrumptious result: blue cheese, omelette, rosemary prosciutto and rucola on oily ciabatta bread. The sharp cheese definitely takes the egg to another level, even if you want to leave out the bread, you should try this duo one day. Rosemary prosciutto is my all-time favourite ham, thin slices of the finest Italian art of butchering refined with the woody herb, this is perfection made complete with the slight sweetness of the light and fluffy eggs  and the salty cheese. It can't get any better when it comes to the easy enjoyments at table!

Blue Cheese Omelette and Rosemary Prosciutto Ciabatta Sandwich

For 2 sandwiches you need

  • medium ciabatta bread, cut into 2 pieces, 1

  • organic eggs 3

  • heavy cream 50ml / 1 3/4 ounces

  • freshly grated nutmeg

  • salt and pepper

  • blue cheese, crumbled, 50g / 1 3/4 ounces

  • Italian rosemary prosciutto, very thinly slices, 2-4 large slices

  • butter 1 tablespoon

  • olive oil 1/2-1 teaspoon

  • rucola, a small handful

  • fresh rosemary, a few sprigs, for the topping

  • black peppercorns, crushed in a mortar, for the topping

Whisk the eggs, cream, nutmeg, salt and pepper. Heat the butter in a pan and pour in the egg mixture, scramble very lightly and fold onto itself. When the bottom side starts to become golden flip it around. Brown it lightly from the other side for about a minute. Take the pan off the heat and sprinkle the blue cheese on top of the warm omelette.

Cut the ciabatta pieces in half and brush each bottom half with a little olive oil, lay a few rucola leaves on top. Divide the blue cheese omelette in half when the cheese starts to melt and lay on top of the green leaves. Sprinkle with a few rosemary needles and pepper and cover with the rosemary prosciutto. Close the sandwich and enjoy!
